The brain stem and one ear was still intact, which is why Mike's body continued to function. In effect it was not decapitation, it was a severing of the brain. The thinking part was gone, so yes, Mike was a goner. His body was on automatic pilot at that point owing to how the brain works in a chicken. I don't find it particularly fascinating myself, but then stories like this tend to evoke a strong emotional response in me. I will refrain from ranting though.
